How do I record powerpoint presentations with embeded videos. Right now all I get is a blank video screen and audio.

This happens due to hardware acceleration. To record the video, you must turn off hardware acceleration.

To do so, refer to My Screen Recorder Pro's help guide. You can also read about it online at:
